Ayam Masak Habang or translated as chicken cooked in red chilli sauce is originally fromBanjar, South Kalimantan, Indonesia. It is a very special dish in Banjar that can be served everyday or when one have visitors or when there are special occasions such as wedding, eid ul fitr, ritual meeting, etc.Ingredients
Directions:
Smear the chicken pieces with salt and Javanese Tamarind Water
Knead the chicken and leave it for 10 minutes to let it absorbs the seasonings
Heat the cooking oil in a wok or skillet, fry the chicken until it turns yellowish
Remove and drain
Heat 5 tbsp of cooking oil, sauté spices until fragrant
Add the fried chicken, stir, and pour water
Add sweet soy sauce, sugar, tomatoes and palm sugar
Continue to cook over low heat until the chicken is cooked well and the sauce thickens
Transfer to a serving dish and serve while still hot
